I doubt you would see any blood anyway - birds have very little to begin with and when diluted in water would probably not be visible. I think the octo was hungry and karate chopped the bird from the rock

They are such complex and creative animals that your theory wouldn't surprise me at all. It might also be killing it out of spite for taking a crab it had been stalking or fulfilling a contract taken out by the godotter. Once octopi invent reverse SCUBA (and probably cybergenic exoskeletons) we're all screwed.

primarily yes, but they also eat fish and other mollusks (including octopus). And sea gulls rarely go after anything that could fight back.
